I was talking with a good friend the other day, and we were discussing Mothers’ Day. I had mentioned that I was making a great Peach Balsamic Bellini to celebrate. She started laughing. She then told me her kids would come over to her house to celebrate, and she was the one who did all the work. That just seemed wrong to me. The good news is she has advised them, not this year.
So what are you doing for your mom on Mother’s Day? Not sure? Well, I have an idea for you. What about a Peach Balsamic Bellini? You can make the main part ahead of time and serve it as a surprise for your Mom. This beverage goes very well with a nice brunch. It is very easy to make so no excuses. 🙂
Peach Balsamic Bellini
- 1 Cup Peach Balsamic Vinegar
- 1 Pound peeled, sliced ripe peaches, or 1 16-ounce bag defrosted frozen peaches.
- 1 Bottle chilled Prosecco or other good quality sparkling white wine
- Garnish: A spring of mint and fresh raspberries
Directions:
Place the peaches and the balsamic vinegar in a blender and blend until all it reaches the consistency of a smooth nectar. Pour the peach nectar into a large pitcher, add the Prosecco or sparkling wine, stir gently and then serve in a nice champagne flute adding the garnish on the side for a nice effect.
Notes: You can make the peach balsamic nectar ahead of time and hold in the refrigerator until you ready to make this Bellini. Regular balsamic vinegar will not work; it’s simply too strong. However, I have used different types of peach balsamic with great results. My favorite is the Peach White Balsamic Vinegar from We Olive.
I love the tang of the balsamic and the sweetness of the peaches in this cocktail, and so will you. It is super for any celebration or just because on a hot spring or summer day. If you make this Peach Balsamic Bellini for your Mom, she will love you for it.
