I love potatoes, especially these smashed lemon potatoes. Not as much as chocolate mind you, but they are up there. There are times I have an all veggie meal. I like to experiment with different vegetables and flavor combinations. Potatoes are a great “blank canvas” to have some fun with. I initially saw a similar recipe in Martha Stewart’s Everyday Food but somehow misplaced it. So I created my own. It is now in my permanent recipe library for my family cookbook. This is a fun and creative side dish when you want something a little different but without a lot of work.
Smashed Lemon Potatoes
Ingredients: 3 potatoes per serving for 4 to 5 servings
- 12-16 small Yukon Gold potatoes
- Kosher salt
- Pepper
- 2 tablespoons coarsely chopped parsley
- Olive oil
- 3-5 tablespoons lemon juice
Directions:
Preheat oven to 350 degrees. Place the small potatoes in a pot of water and boil until just fork tender. Remove from the boiling water, drain and let cool. Press to flatten each potato with a potato masher or spatula. Pat the smashed potatoes with a paper towel to remove excess moisture. Transfer the dry flattened potatoes to a Silpat-lined or greased sheet pan. Brush generously with olive oil. Sprinkle chopped parsley over each smashed potato and season with salt and pepper. Roast for 10 to 15 minutes or until the edges of the potatoes start to crisp up. Remove from the oven and sprinkle with lemon juice while still hot.
Notes: You can boil the potatoes and refrigerate ahead of time, then complete the recipe when you are ready. The smashed potatoes can be cooked to a more crispy state. That is entirely up to you and your taste. You can use different herbs in place of the parsley; such as thyme or rosemary. I sometimes sprinkle a little cayenne on the potatoes for a little kick when I serve them with barbecued ribs.
