This light easy tomato pasta is a super fast entree to throw together in minutes. It uses what we already have in our pantry giving you an instant meal that is light, delicious and inexpensive. We will often have this light easy tomato pasta dish when we have visiting friends and family.
Light Easy Tomato Pasta
Ingredients:
- 4 to 6 Cloves of garlic, minced
- 1 2.5oz Can sliced black olives drained
- 1 14.5oz Can diced tomatoes un-drained
- 1 Ib. Spaghetti pasta
- 3/4 Cups fresh basil chopped
- 3 tbs. Extra virgin olive oil
- 1 tbs. Butter
- 1/4 Kosher salt
- 1/4 Fresh ground pepper
- Garnish: shaved or grated Parmesan cheese and whole basil leaves
Cook the pasta according to the package until just al dente. Drain, set aside and keep warm.
While the pasta is cooking, heat the olive oil and butter in a large skillet. When the oil is heated and the butter is melted, add the minced garlic and sauté lightly, add olives and continue sautéing until warmed through, add tomatoes and juice, salt and pepper and simmer the mixture until it starts to thicken, reducing the liquid by half. Then toss in the basil incorporating it into the sauce.
Pour the pasta in a serving dish. Place the sauce over the pasta and lightly toss to coat and incorporate. Serve immediately.
To serve, place the desired amount on a plate, sprinkle on some Parmesan cheese and top with a basil leaf.
Notes: Make sure not to overlook the pasta. We always ensure the pasta is just al dent so that it doesn’t overcook while we are keeping it warm. Don’t thicken the sauce too much or it won’t coat the pasta as well. Leftovers (if there are any) are great. Just heat a little olive oil in a skillet and add the leftover pasta dish and toss until warmed through.
This light easy tomato pasta recipe is, yet again, a family favorite. All you need to complete the meal is a fresh salad with my vinaigrette dressing, good crusty bread and a nice bottle of wine. It’s a dish that you can have for company or anytime for a quick and easy meal. Enjoy.
