Not long ago I had given you a tour of my garden. One of my readers had requested that I share the Spinach Feta Cheese Frittata I had pictured in the article. Frittatas are very easy to make and have endless varieties and combinations. I love spinach feta cheese in just about anything. So naturally it also makes a great combination in omelets or frittatas. This Spinach Feta Cheese Frittata is just one of my all time favorites.
It was beautiful lazy Sunday morning, the perfect time to make this Spinach Feta Cheese Frittata.
Spinach Feta Cheese Frittata
Ingredients:
- 2 large Eggs
- 2 tablespoons Cream
- Salt and pepper
- 2 – 3 tablespoons Fresh spinach (cooked, squeezed and dried)
- 1/4 cup Feta cheese
- Pat of Butter or a tablespoon of olive oil
- 8 inch skillet- nonstick
Preheat oven boiler. Heat butter or oil in a 8 inch nonstick skillet. Whisk eggs and cream together and pour into the pan. Add spinach and feta cheese distributing evenly on top of the egg mixture. Gently lift the sides of the eggs to let eggs run under and around and cook until the outer edge of the eggs starts to puff up. Remove from the heat, season with salt and pepper to taste and place in the oven under the broiler until the eggs puff up and are almost set. Watch the eggs carefully so as not to over cook. This will only take a few minutes. Once the frittata done slid it on a plater or serving plate.
Note: The eggs will be a bit runny in the middle but will continue to cook when removed from the broiler. If you desire a bigger frittata, just double (or triple) the ingredients, using a larger nonstick skillet (10″ to double to 12″ inch to triple) and cut into wedges to serve.
