Ok, I’ll admit this recipe is not really the traditional hollandaise sauce. It’s actually a mock hollandaise and boy is it ever good. Many times I will pass on Eggs Benedict at a restaurant because the hollandaise sauce tastes more like a white sauce or it seriously lacks in flavor… yuck. I like my hollandaise sauce to have that bright spark of a flavor that can add so much to so many side dishes or a main course.
