I want to thank Susan for having me on her blog as a guest writer/blogger. I’m enjoying the change that this monthly post is giving me. Thank you {smile}. This time I’ll showcase a Green Bean Hamburger Casserole.
I’ve never been much of a cook. It isn’t that I can’t follow a recipe. Pure and simple, I’m just not that interested. This may be because meals, in general, don’t excite me. This doesn’t mean that I don’t like eating though. I just don’t want all that fuss and preparation. I am a snacker.
I wish I could be like Susan and really get into the art of cooking like she does. I marvel at the variations of dishes she comes up with. Judging from the photos she takes of her progress with each cooking project, she enjoys her hours in the kitchen.
This Green Bean Hamburger Casserole recipe I’m sharing with you today is, of course, another very easy one. Once again, it’s diabetic friendly. On top of all this, this is another recipe I confiscated from my mother-in-law. (I am so glad that we are of like minds.)
Green Bean Hamburger Casserole

Utensils:
- 2 quart casserole dish
- cutting board
- knife
- skillet
- mixing bowl
- serving or cooking spoon
Ingredients:
- 1 pound hamburger
- 1 small onion (chopped)
- 16 oz. green beans (You can use canned that are strained or go for frozen or fresh green beans cooked until barely tender.)
- 1 can of cream of mushroom or cream of chicken soup
- Sliced cheese – approximately 4 slices (I prefer Swiss but use what you like)
- 1 cup of milk
- Tater Tots
Directions:
Preheat over to 350. Brown the hamburger and the onion together in a skillet and put the mixture into a ungreased casserole dish.

In a mixing bowl, combine the green beans, cream soup and milk.
Put the green bean mixture on top of the hamburger mixture. Do not blend.
Put slices of cheese over the green bean mixture. Again, do not blend.
Cover the cheese slices with a layer of Tater Tots (still frozen).
Bake uncovered 40 to 50 minutes at 350 degrees.
Variations: You may want to try ground chicken or pork. If you like a little spice, you may want to go for ground Italian sausage.
Notes: I have found this dish is good to take to potlucks. If it needs to be warmed up, it does well in the microwave. If you’re using a traditional oven to reheat, you may want to put foil over the top so that the Tater Tots don’t get too brown and dry.
Pickled Beets or a nice mixed green salad would make a good side dish with this casserole.
