As the holiday season approaches I think of making fun breakfast and brunch items such as these Ham and Cheese Mini Quiches to serve to my family and friends. There is nothing quite like a good breakfast to get the day started off right. It’s especially fun when it easy, pretty and delicious. The best part is my Breville Mini Pie Maker helps to make it happen.
The recipe originated from Mini Pies by Abigail Johnson Dodge. I made quite a few modifications to make it easier. These changes helped the recipe work well with the mini pie maker. So here goes.
Ham and Cheese Mini Quiches
Ingredients: 4 pies
- 1 Prepared pie crust dough
- 1/3 Cup whole milk
- 2 Large eggs slightly beaten
- 2 Teaspoons Dijon mustard
- Dash of salt and freshly ground pepper
- 1/2 Cup shredded Swiss cheese
- 2/3 Cup dices cooked ham
Optional: Garnish with chopped fresh chives
Directions:
Preheat the Breville Mini Pie Maker. Using the provided mini piecrust cutter, cut out 4 mini pie rounds and place in the refrigerator to keep chilled. Mix the milk, eggs, ham, cheese, mustard and salt and pepper until combined and set aside. Remove the prepared mini pie rounds from the refrigerator. Using the pie press, quickly position the pie rounds over each pie maker well and press into the pie wells. Spoon equal amounts of the pie filling into each pie crust. Closed the pie makers and bake for 8 minutes. Check to see if the filling is puffed up and crust is browned. Using a pie lifter or two forks, carefully remove the mini pies and place on a rack to cool slightly. Serve immediately.
Notes: Keeping the piecrust pieces cold until right before use is very important. You can cut the piecrust and mix the pie fillings ahead of time before you start assembling the pies in the pie maker. Things go much faster and more smoothly when you do this. The pie lifter is a “must have” tool for the Breville Mini Pie Maker. It’s not quite as easy lifting the pies out of the Breville Mini Pie Maker otherwise. It’s helpful to check the cooking progress of the pies about halfway through the suggested cooking time.
These are always fun to make and a big hit when I make them. I generally serve these with a nice side of fruit accompanied with juice, coffee or tea. There are times when I have all the ingredients prepared ahead of time. This allows my guests to pitch in and help make these Ham and Cheese Mini Quiches with me. It makes for a fun start to our day.
