My favorite cookie is peanut butter, but when I add a chocolate kiss to it, I’m in heaven. I had posted a super easy peanut butter cookie recipe a while back. So I thought, why not change it up a bit and add a chocolate kiss to it to make Chocolate Kiss Peanut Butter Cookies. Again, the best part is these cookies couldn’t be any easier and can be made up in a flash when you have an overwhelming need for a homemade cookie.
So let’s begin. The Super Easy Peanut Butter Cookie from “Our Favorite Quick & Easy Recipes from Gooseberry Patch” is what I used as the base. All I added was the chocolate kiss at the end to make these Chocolate Kiss Peanut Butter Cookies.
Chocolate Kiss Peanut Butter Cookies
Ingredients: Makes 12 to 16 cookies
- 1 cup Creamy Peanut Butter
- 1 cup sugar
- 1 large egg
- 12 to 16 Hershey’s Chocolate Kisses or mini Reese’s Cups
Directions:
Preheat oven to 350 degrees F. Excluding the Chocolate Kisses, blend all the ingredients until incorporated. Let the mixture rest for about 5 minutes. Using a small spoon or large melon baller, roll the batter into a 1-inch ball and then place 2 inches apart on an ungreased baking sheet. With a little flat-bottomed glass, press down on each dough ball to slightly flatten. Bake for 11 to 13 minutes. Place the Chocolate Kiss on each cookie right out of the oven then let the cookies cool on the baking sheet for about 5 minutes and then transfer the cookies to a wire rack to finish cooling.
Notes: You can use many kinds of peanut butter, and it will work just fine. Natural peanut butter, depending on the consistency can be a bit tricky. It’s essential to allow the dough to rest and to leave the cookies on the baking sheet for 5 minutes so don’t skip these steps. If your kids are making them, I recommend that you slightly beat the egg to help the kids with incorporating all the ingredients.
