Roasted Chicken Breast with Garlic Redskin Potatoes

This is a recipe I had posted way back in the very beginning of my blog.  I served this Roasted Chicken Breast with Garlic Redskin Potatoes when my blogger friends were visiting.  I thought it would be fun to repost this for your enjoyment.

When I’m in a pinch and need a really great meal without a lot of muss and fuss, this Roasted Chicken Breast with Garlic Redskin Potatoes Recipe is one of my favorite “go to” entrées.  I love the flavors, simplicity and ease of this Roasted Chicken Breast with Garlic Redskin Potatoes Recipe.  It is a pretty dish that works well for company.

I found the original recipe in 5-Ingredients Family Favorites by Gooseberry Patch.  It is an awesome book with really great and easy recipes.

With some tweaking, this is the recipe I now use.

Roasted Chicken Breast with Garlic Redskin Potatoes

Roasted Chicken Breast with Garlic Redskin Potatoes, findingourwaynow.com

Ingredients: (4 Servings)

    • 4 large equal size skinless boneless chicken breasts
    • 1 1/2 lbs. small redskin potatoes cut in half
    • 20 whole cloves of garlic
    • 1 tablespoon chopped fresh thyme
    • 1/4 cup olive oil
    • Salt and pepper to taste
    • Optional: fresh thyme sprigs for garnish

Directions:

Roasted Chicken Breast with Garlic Redskin Potatoes, findingourwaynow.comPreheat the oven to 425 degrees.  Place chicken breasts side by side in a 9 x 12 casserole dish.  Arrange the potatoes and garlic around the chicken breasts.  Sprinkle with thyme, salt and pepper.  Slowly drizzle olive oil over top.  Bake uncovered for  20 minutes then reduce oven temperature to 375 degrees.  Continue baking for about 35 to to 40  minutes.  The internal temperature should be 160 degrees. Remove from the oven letting it rest.  The chicken will come up to the desired temperature of 165.  This recipe serves 4 people nicely.

Note:  This recipe can easily be doubled.  I generally use two casserole dishes when that is the case.  When adding salt and pepper to the dish, I lightly cover the ingredients in the casserole.  I find that works well.

What I like about this recipe is you can assemble it and have it baking in the oven while you go about the rest of the meal.  I generally serve this with another vegetable such as green beans and a nice Chardonnay.  Enjoy.
