Eyeball Pasta: Recipe

Halloween At Our House, findingourwaynow.comWe’ve had a great time this Halloween, made especially fun with this Eyeball Pasta Recipe.  My friend and I came up with the idea when we were casting around for something to make for dinner.  It was a blast putting this recipe together, and the taste was to die for (get it?).

This recipe is fast, fun and a hoot to make.

Eyeball Pasta

Ingredients: 

  • 24 pre-made frozen meatballs (partially thawed)
  • ½ pound fresh mozzarella
  • 12 Pimento Stuffed Green Olives
  • 1 pound Spinach Fettuccini (cooked according to package)
  • Marinara Sauce – 1 Jar  (26 ounces) or Homemade

Directions:

Eyeball Pasta, findingourwaynow.comPreheat oven to 400 degrees. To make the eyeball meatballs, scoop out some of the meatballs with a melon baller. Mold the fresh mozzarella into the hole and around the meatball to cover half of it. Place ½ of a pimento-stuffed green olive in the hollowed out cheese covered meatball. Place the prepared meatballs side up in a mini muffin tin. Bake the meatballs until they are warmed through, and the cheese is nice and bubbly (about 10 minutes). Cook the spinach fettuccini as directed. Warm the marinara sauce in a saucepan. Plate cooked fettuccini; ladle some marinara sauce over pasta. Insert a toothpick in three eyeball meatballs and place on top of the marinara sauce.

Notes:  I will often use my homemade meatballs in recipes like this. If you don’t make your own, a good pre-made variety works just as well.

These make fun hors d’oeuvre for a Halloween party.  Kids just love these meatball eyeballs.  The best part is it is an excellent dinner entree, especially around Halloween.  Enjoy.
