Friends and family gatherings are always fun, this time of year especially with spring peeking its head at every turn. In an effort to find ways to make it less stressful in the kitchen, I always look for easy make-ahead recipes that are everyone’s favorites. This Simple 7-Cup Ambrosia Fruit Salad is one of them. This recipe couldn’t be any easier; it’s one of our family favorites. The funny part is, invariably there is a request for a copy of this recipe, so I always have some on hand for that reason. Here is it for you and you didn’t even have to ask. 🙂
Simple 7-Cup Ambrosia Fruit Salad
Ingredients:
- 1 cup red seedless grapes cut in half
- 1 cup green seedless grapes cut in half
- 1/2 to 1 cup silvered Almonds (to taste)
- 1 cup shaved or shredded coconut (sweeten or unsweetened)
- 1 11oz can of mandarin oranges, drained
- 1 20oz can pineapple chunks, drained
- 1 cup sour cream
Directions:
Thoroughly drain the pineapple and mandarin oranges with a colander. In a large bowl, add the coconut, grapes and almonds and mix until blended. Add the sour cream and fold into the fruit and nut mixture unlit well blended. Cover and place in the refrigerator until well chilled or overnight. It keeps nicely in a sealed container the fridge for up to 5 days (if it lasts that long, :-)).
Optional: You may add a cup of miniature marshmallows at the end if you prefer a sweeter ambrosia.
Notes: Always make sure you drain the pineapple and mandarin oranges or you’ll wind up with a soupier mixture then you would desire. You may use other types of fruit in place of the grapes. It’s all a matter of taste. The amount of nuts you use is again up to you. This recipe can easily be doubled for a large crowd.
We have made this salad as long as I can remember. So much so that I have it memorized. We will sometimes make this recipe for a sweet treat after a meal.
