This Apple Oat Crunch is a recipe that my husband I ran on to a very long time ago when we were trying to improve our diet with a quick healthy breakfast. What is so cool about this recipe is you do not cook the oats. I was a bit skeptical at first when we first gave it a try but it works, and it has a great taste.
The original recipe has since been modified, and this is now the one we use. It makes two serving. The recipe below can easily be doubled or tripled for a crowd.
Apple Oat Crunch
Ingredients: Makes 2 servings
- 1 cup of Old Fashioned Rolled Oats
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ cup slivered or sliced almonds
- ¼ cup mixed jumbo raisins
- Pinch of salt
- 1 medium apple cut into bite size pieces
- ½ cup unsweetened applesauce
Directions:
Combine the first 6 ingredients in a bowl. Mix the apple pieces into the dry ingredients. Add the applesauce and mix until combined thoroughly. You can warm the mixture in the microwave or serve it cold. I like it either way.
I serve this with a hot cup of coffee, tea, a cold glass of milk or apple juice.
Variations: Use any variety of nut or a mixture of nuts you like in place of the almonds. You can use chopped dried fruit or regular raisins of your choice in place of the jumbo raisins.
Notes: The key to this recipe is really good oats, a firm, crisp apple, and quality apple sauce. Even though I use Fiji apples, any good firm eating apple will do It’s a recipe that you can’t mess up unless you forget to add an ingredient, something I’ve done on occasion.
The healthy aspect of apples and this recipe are unavoidable. The good news is it tastes really good. It’s fast and easy to make, especially on a busy morning when you need a little more time. Add a cup of coffee or tea and you’re good to go.
