Many times a smell from the kitchen of a special or remembered recipe will mentally throw us back to favorite memories. These two recipes do that for me. They are surprising easy and, quite tasty.
Both of these recipes are family favorites for many reasons. The donut recipe is my creation. It reminds of when I was very young and a Halloween experience that still makes me smile to this day.
Now, let’s get on with making these two delightful recipes.
Homemade Cinnamon Donuts
- Canola oil spray
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon salt
- ¾ cup prepared dry buttermilk
- 2 eggs, lightly beaten
- 2 tablespoons butter, melted
Directions:
Preheat oven to 425°F. Spray two regular size donut pan wells with oil and set aside.
Combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt into a sifter. Sift the dry ingredients into a large mixing bowl. Add the buttermilk, eggs, and butter; stir until just combined. Do not over mix. Scoop the batter into a large Ziploc bag, cut off the corner of the bag about ½ to ¾ inch. Pipe the batter into donut well, filling each well to approximately ⅔ full. Make sure the batter is dispersed evenly around the center and edges of well.
Bake 6-8 minutes. Check for doneness by inserting with a toothpick. If it comes out clean, or the top of the donuts spring back when pressed lightly, they’re done. Cool in the pan 2 to 3 minutes; remove the donuts from the pan and place on a cooling rack.
Melt 4 to 6 tablespoons of butter in a small saucepan. Combine 1-cup sugar and 4 to 5 tablespoons cinnamon in a small bowl. Dip each donut in the butter on both sides and then toss in and sprinkling with cinnamon sugar. If needed, pat the surface to help it to adhere. Repeat until all the donuts are coated and serve.
Don’t these look yummy? Trust me, these homemade cinnamon donuts are worth the small amount of time it takes to make them.
Hot Spiced Cider
- 8 cups of Apple Cider or juice
- ¼ cup packed light brown sugar
- ½ teaspoon whole allspice
- 1 teaspoon whole cloves
- 1 cinnamon stick
- ¼ teaspoon salt
- 1 pinch freshly grated nutmeg
- 1 large orange quartered
- ½ lemon cut in two wedges
Directions
In your coffee maker, fill the lint-free coffee filter with the brown sugar, allspice, cloves, cinnamon stick, nutmeg, orange and lemon wedges. Pour the Apple Cider into the water well of your coffee maker. Brew and serve immediately.
